I was actually inspired by some pictures that I saw on Tumblr. They looked yum so I though i would come up with my own version
Need.
4 peppers (any color)
6 eggs
1 1/2 cup cooked Meat (sausage, or bacon, or ham, veggie burger, whatever you fancy)
2 cups of cheese (any type and the amount can be adjusted more or less to your preferences. I am using mexican 4 cheese blend)
nonstick skillet
Oil
salt and pepper

1) cut the bottoms and tops off of pepper and then cut the middle part into rings, I usually get 4-5 rings per pepper. Note that the thicker the ring the more time it takes to cook

2) crack eggs and whisk until foamy. Then add in cheese and meat. Also, mince chop the tops and bottoms saved from step one and add them to the mix. The is essentially your omelet mix. Oh and also add a bit of salt and pepper.

3) heat up skillet add a bit of oil and then add pepper rings in a single layer in the pan (usually 4-5 depending on size of skillet), then spoon omelet mixture into cups. do not over fill, the mixture will expand as it cooks. Cook on low heat until semi set, and then flip to cook the other side.
Note: Unless you have really sharp knives, you will probably not have pepper rings so evenly cut that they are flush with the bottom of the pan. which means when you add the egg mixture it will leak out the sides a bit. it’s okay, just let it cook a bit and then when it’s set use a fork or chopsticks to pick up the spillage and just add it back into the cup.

4) Enjoy.
